Omelettes : Life Saving Leftovers

Okay here are the recipes used in this video…

BASIC OMELETTE ( YET INSANELY DELICIOUS )

You need 3 eggs. That’s the standard, so…
you coud use 2 or 4 as on this channel we tend not to respect any standards at all.
A pan. non stick pan is good .. otherwise you’ll probably end up eating in the pan.
And a fat agent : all kinds of oil, butter or bacon fat…. (smile)

Grab a spatula. or a wooden spoon.
Strongly whisk the eggs in a bowl with a pinch of salt and pepper.

Remember : Globally it takes no more than 1 to 2 minutes on the heat..

TIP NUMBER 1 : Medium High Heat , meaning 5 out of 6. Do not miss this one.

A bit of oil and Pour them in the pan,
KSSSSHHHHHTTTTTTT is the sound you should be hearing.

TIP NUMBER 2 : Use the spatula to bring the edges towards the center
We are creating curds, i mean a solid structure in the pan that will transfer heat from the bottom to the liquid.

Folding the omelette on itself is optionnal, But I agree, it looks cool and posh so we’ll do it.
When it’s not liquid anymore, but still very moist, tilt the pan.
Spatula underneath and fold.
Press it down so that it takes the shape of the pan.
A few seconds more and remove it from the heat.

Gorgeous every time.

EXAMPLE #1 : COUNTRYSIDE OMELETTE

Countryside twist With leftovers of ham and mushrooms.

Making the omelette, Just add some Bacon bits, mush rooms in the pan when you got those curds.
That’s it. Gorgeous . What did you expect ? It’s simple I told you.

EXAMPLE #2 : TORTILLA DE PATATA : SPANISH OMELETTE

SPANISH TWIST using Potato leftovers
Chop the potatoes not too thin not too thick and If you got an onion, good, chop it also.
Olive Oil goes in the pan, then the onion, and a 5 minutes later the potatoes.
Pour in the eggs. 5 minutes more.
You can’t actually fold this one, you’ll have to flip it over using a plate.
5 minutes more.
Beautiful and golden brown.

EXAMPLE #3 : FRITATTA : ITALIA OMELETTE

Last an HEALTHY ITALIAN TWIST
I got some greens leftovers : spinach, aspargus, zucchini
Just drop them in when you got the curds, along with a good gratting of cheese, any cheese you like
No need to flip this one, but you can pop it in the oven if you want gratin omelette.

they are a killer way of dealing with leftovers.
